There is basically no difference between a LD and a GD in personality, by breed anyway. Labs and Golden are very simmilar and when you mix them with poodles you get pretty much the same temperment in each type of doodle. It depends more on the specific parent dog than the difference between a lab and a Golden. In first generations (F1s), there are more coat colour options in LDs since labs come in 3 colours, and Goldens do not, i.e. you cannot get a brown F1 GD. The coat of an F1 GD is usually longer, but by the time you get to F1b (F1 bred back to poodle) the coats are the same.
Double doodles are also called North American Retrievers, they are a cross of LD and GD. pretty much the same as a higher generation LD or GD at that point.
